The white truffle’s scientific name is Tuber Magnatum Pico. It looks aesthetically smooth with irregular in shape and its colors range from yellow to ocher shades leaning towards gray and olive-green. The size of the fungus varies from a few centimeters to specimens that far exceed 500g of weight.
The white truffle has an unmistakable aroma that makes it known all over the world and that it blends perfectly with the first course and with the main course dishes of meat or fish. White Truffle always needs avoiding cooking for a long time: therefore white truffle is perfect for slicing fresh on the dishes already cooked.The harvest period runs from September to January and the richest areas of this extraordinary mushroom are the Langhe territories, the area of the Tuscany-Emilia and Umbria-Marche Apennines.
The black truffle’s scientific name is Tuber Melanosporum Vittad. It looks aesthetically roundish but sometimes, to adapt to the growth environment, it can become irregular, the surface is covered with small, dark-colored pyramid shapes. The size is variable but almost never reaches the size of an apple. The aroma of black truffles is aromatic, not too pungent and sometimes it is fruity. The taste is delicate but firm, it does not have problems with longer cooking, making it suitable for the preparation of first courses dishes and second courses with meat. The harvest period is between December and March, the Umbra area of Norcia represents a large basin, in fact, it is also commonly called Black Truffle of Norcia. It is also known as Perigord’s truffle, a rich French region of this species of mushroom.
The Bianchetto Truffle, the scientific name Tuber Borchii Vittad, looks aesthetically similar to White Precious (Tuber Magnatum Pico). While maturing the whitish truffle tends to become darker and the size rarely exceeds the size of an egg.
Even the aroma emanated from this truffle reminds that of Tuber Magnatum, sometimes it is stronger because the garlicky notes are predominant. Culinary use is the same as White Truffle, it should be remembered that these truffles are not to be cooked for a long time.
It is also known as Marzuolo truffle because the collection period runs from January to April and the harvesting area is Marche-Romagna and Tuscany.
Tartufo Estivo, the scientific name Tuber Aestivum Vittad, looks aesthetically of irregular shape and size, with small superficial dark growths. The color darkens with ripening until it becomes dark brown.
The aroma is delicate and pleasant, with a hint of mushrooms which is also evident in the flavor.
Also known as Scorzone it is one of the cheapest truffles but is still a delight in the kitchen. As all “black” truffles its do not fear longer heating & cooking time and can accompany any kind of recipe.
The Tartufo Estivo collection period is from May to September.
Il Tartufo Uncinato, the scientific name Tuber Uncinatum Chatin, is very similar in appearance to Tuber Aestivum so that many consider them to be two variants of a single species.
The color is dark and also the aroma and the flavor are much more decisive than those of the Black Truffle.
The harvest period of Uncinato truffle coincides almost with the collection period of Tuber Magnatum, the months range from October to December, which are months to harvest a richer variety of truffles.
